SWEET TAMARIND

The tamarind fruit is a long pod, green when unripe. The flesh is green and hard. The mature tamarind pod is brown, brittle and rough. The flesh is brown. The tamarind is a variant of the ordinary tamarind. Tamarind seeds are shiny brown. The tamarind starts flowering in May, and the ripe pods are harvested from December to April. The fruit is a source of carbohydrate, protein, calcium, phosphorus, iron and vitamin A (The fruit is approximately 1.5 to 2 cm. wide and 10 to 15cm long)
